Soda Bread

One of my favourite kinds of bread is Soda Bread..... So easy to make and - and I think this is one of the reasons why I like it - there is no yeast involved, no proving...(I am a bit scared of yeast). Here is my favourite recipe:

225g wholemeal flour
375g strong bread flour
2 tsp salt
1 tsp bicarbonate of soda
25g lard
1 spring onion, finely chopped
2tbsp chopped fresh parsley
2 tbsp chopped fresh tarragon
50g medium oatmeal
600ml buttermilk (or cow's milk with a little lemon juice added and left for 20 minutes)

♥ preheat the oven to 190°C / 375°F
♥ sift flour, salt, bicarb into a bowl and rub in lard
♥ stir in the spring onion, herbs and oatmeal
♥ add a little milk at the time and mix into a loose dough
♥ knead lightly until smooth an shape into 2 rounds
♥ place onto a greased baking sheet
♥ score each loaf into quarters and sprinkle with wholemeal flour
♥ bake for about 30 minutes, or until the loaves sound hollow when tapped underneath

Best eaten fresh - but also nice toasted the next day.... I often half theamoutns and just make one loaf - it is so easy and quick, I'd rather do it more often and eat it super fresh...

One of my favourite quick lunches - an open sandwich with smoked salmon and plenty of horseradish on a fresh slice of soda bread. LOVE it!

  1. Wie überlebst du ohne Hefe? Ich bin ein absoluter Hefe-Fan. Die Kombination Natron-Buttermilch ist aber genau so der Renner. Bei mir geht beides. Und egal wie, so ein selbst gebackenes Brot ist immer gut.

I don't know if it's your photographs Nicola or just the recipes themselves, but you make me want to turn into Delia in the kitchen whenever I read your delicious blog! Notice that I only post pictures of apple pies or cupcakes on my own blog - those are the only things that vaguely come out looking like I intended!!! xx

    p.s. OM MY GOODNESS did you get the thunder and lightening last night? I personally LOVE the drama of a big storm, but I had three extra little people in my bed because of it which was seriously uncomfortable!!!

    das brot sieht wirklich oberlecker aus...also ich bin der " Backmischungen -Typ"...aber Deines ´klingt gut ( obwohl ich Hefe, vor allem Hefekuchen total gerne mag ), habe noch nie m mit Natron Brot gemacht...ich glaube Lebkuchen ( ??)schon...Zeit und Muse zum backen kommt erst jetzt, wenn sämtlich Marmeladen und Kürbissuppen gekocht sind...der Nieselregen hat uns erreicht, dann bleibt man eh mehr drinnen.Bin eh nicht so begabt beim kochen und backen,.... sägen, streichen, nähen etc. mach ich viel lieber, aber die Familie will ja essen..:)).

    uihh, uff, ich brauche jetzt ein Übersetzungsbuch. Was verstehst du denn unter Soda? Ist das Mineralwasser? Deine kleine Kneipe in Nizza mit dem Ober mit Schnurrbart habe ich direkt vor mir gesehen. Hach ich will auch Champus und Leckereien in Frankreich, hmmm.

    Das Brot sieht sehr lecker aus - ich steh mir Hefe ja auch immer ein wenig auf Kriegsfuß - da freue ich mich umsomehr über solche Rezepte!

    I never made sodabread before, but I think I will copy and paste your recipe into word, print it out and try it. It looks great with the Salmon! I will be good with a bowl of soup as well.
